Vineyard - Vinegary

It's a common misconception that if you make a batch of bad wine 'you may as well turn it into vinegar' and sometimes even the best winemakers get vinegar 'by mistake'. 

As the newest vinegary on Vancouver Island, the Damali partners are creating a culinary art form in the producing of fine wine vinegars.  They start with the best wine possible and inoculate it with vinegar 'mother'. In a few months and under certain conditions the vinegar is finished and some is infused with herbs or fruit. Damali currentluy has plain white wine vinegar, lavender infused white wine vinegar and lavender & rosemary infused white wine vinegars.  These mild flavoured vinegars are great for salad dressings and marinades or just drizzled over your favourite fresh or steamed vegetables (excellent over cooked leafy greens such as spinach, swiss chard or kale)

As well as great taste, unpasteurized vinegars are considered to have significant health benefits. A teaspoon before a meal helps in the digestion process, it increases your metabolism allowing for efficient weight loss, it boosts the immune system helping to fight off colds and viruses and provides a good source of vitamins, minerals and enzymes. 

In April 2010 the first Damali artisan wine vinegars were made from Ortega white wine sourced from Rocky Creek Winery.  Look for Pinot Noir red wine vinegars to be launched with our first wines in May 2011
